Not for nothing is it notoriously difficult to secure a table at Antwerp’s The Jane. The Sergio Herman-Nick Bril venture opened in 2014 on the ground floor of a repurposed military hospital chapel, its dining room illuminated by a spectacular 900kg starburst chandelier and the kitchen on the spot where the altar once stood. The food pulls off the trick of being sophisticated and simple. Menus come with no elaborate description, allowing the typically bold flavours – smoked salmon and horseradish, pulled duck taco with jalapeño – to speak for themselves.
