Not for nothing is it notoriously difficult to secure a table at Antwerp’s The Jane. The Sergio Herman-Nick Bril venture opened in 2014 on the ground floor of a repurposed military hospital chapel, its dining room illuminated by a spectacular 900kg starburst chandelier and the kitchen on the spot where the altar once stood. The food is sophisticated and displays highly skilled cooking. Some of the must-orders are Norwegian scallop, salsify, ceps and autumn broth, and canard de challans, jerusalem artichoke, corn and arabica. If you see 'Nick’s Japanese fetish' on the menu, snap it up, fast.
