Sult is undeniably cool, from its stripped-back industrial-style dining room dominated by a gleaming open kitchen to its choice of natural wines and unpretentious Italian menu. Overseen by chef Nelson Soares, this chic little bolthole is tucked away from Rio's more touristy districts and is essentially the neighbourhood everybody dreams of. Dishes include inventive takes on Italian staples, like mushrooms with cacio e pepe sauce or spaghetti vongole with local chives and freshly-shaved bottarga or squid stuffed with potatoes, courgette, capers and sheep's cheese. And, befitting its trendy status, there are also vegan options like a pasta filled with hazelnut cream, almonds and cashew nuts in grilled vegetable broth. Soares is expanding his empire on a global scale, with the upcoming opening of Sult Cascais, just outside of Lisbon in Portugal.
