A small restaurant with a big heart, farm-to-table Burdock & Co aims to showcase the produce of Vancouver and British Columbia, whether it’s come from land, sea or grown on the vine. Owner Andrea Carlson is also behind the city’s Harvest grocery store and noodle soup café and locavore is likewise the name of the game on Burdock’s full-moon-themed tasting menus, which change every two months and focus on micro-seasonal botanicals and come with zero-proof pairings. Expect sensory-rich, ultra-detailed creations such as the Burdock and pine nut stuffed morel mushrooms with fermented pine nut purée, pin resin syrup and crispy lichen and the fermented spruce syrup barbecue glazed sable fish, pickled porphyra seaweed veil, alder grown shiitake, XO fried radish cake and sake butter sauce. Candlelight suits the restaurant’s opening hours – it’s evening only.
