Many chefs offer tasting menus of 20-plus courses; Published’s chef and co-owner Gus Stieffenhofer-Brandson instead offers a menu of 20 or so intricately conceived small plates, with the aim to encourage repeat visits from locals who can devise their own menus with as many dishes as they wish. Simple descriptions – ‘chicken liver’; ‘albacore’; ‘Pacific squid’; ‘Fraser Valley duck’ – belie not only the time that has gone into constructing each multi-ingredient plate but the time spent sourcing those ingredients: Stieffenhofer-Brandson did a stage at Noma and is a keen forager of the British Columbian landscape, while anything he can’t find himself comes from local producers. The wine list similarly favours the small scale, especially natural and low-intervention wines, with many poured by the glass to match the small plates.
