Suyo Modern Peruvian
Dedicated to the flavours of Peru – from Incan times through various periods of colonialism, extending into modern day – where chef Ricardo Valverde was born and raised, Suyo is an award-winning restaurant where the cocktail programme demands as much praise as the food. Max Curzon-Price (Botanist) oversees the cocktails, which centre on traditional Peruvian drinks like the Pisco Sour and Chilcano, alongside original creations inspired by the landscapes and flavours of the country, including the Amazonian rainforest, the Andean mountains and the coastal regions.
