Masayoshi

Vancouver, Canada

A white chandelier and rows of sake bottles are the most decorative items in this minimal yet intimate dining room. Masayoshi Baba – formerly of celebrated sushi restaurant Tojo’s – demonstrates considerable technical ability and a real eye for presentation in experimental omakase menus that change daily. Unctuous grilled unagi (freshwater eel) served in crystalline broth sits alongside courgette flower stuffed with sticky rice and sashimi so colourful and precise it almost looks animated. Combining the casual air of a neighbourhood favourite with the ceremony of a fine diner, Masayoshi is an excellent introduction to omakase eating for first timers.
