DeMo sits inside the Franklin neighbourhood's technicolour Persa Víctor Manuel shopping centre and only opens for lunch and brunch on Saturdays and Sundays, serving only seven tables from its open kitchen. Its impact on the city's dining scene, however, is huge, with chef Pedro Chavarría and his brigade serving up some of Santiago's most exciting dishes, in no small part thanks to his past stints at Boragó (43 in The World's 50 Best Restaurants 2022 list) and Mexico City's Quintonil (sitting pretty at number 27). The offering is simple, with a set menu based on that week's best produce. Dishes could include candied popcorn with seafood sauce and anchovies or mini brioche stuffed with cured and smoked corvina (a freshwater fish indigenous to South America) tartare and yuyo seaweed.
