Award-winning chef Lin Zihan has always strived to find the sweet spot of respecting tradition while embracing the contemporary. Nowhere is this better reflected than at Wild Yeast in Hangzhou, which serves a Tai-French menu that pays homage to the surrounding terroir, using produce from Taizhou. The dishes of Zihan, chef Xu Zhiqiang and the rest of the team introduce a modern slant to Chinese cooking, taking a local ingredient and letting its natural flavours sing but with exacting precision and presentation. Seafood and fish are a highlight, sourced from the East China Sea. Dishes could be stir-fried lobster with salted lemon and pepper, or wild black-tailed fish with pickled mustard greens and crisp water bamboo shoots; rounded off with ginger and brown sugar soufflé. The wine list is much praised, as is the smooth service. The restaurant itself is a delight on the eye – calm, considered and with the recent addition of Chinese-style private dining rooms.
