Tucked between Cat Street's famous antiques shops, Mora celebrates a different kind of Hong Kong heirloom: its heritage ingredient, soy. Charting its long relationship with Chinese cuisine, 2015 winner of Asia's Best Female Chef Vicky Lau's six-course tasting menu (and five-course lunch menu) showcases the humble bean's diverse flavours, forms and textures. The restaurant produces its own soymilk using a bespoke extraction method that supports ongoing research and development into new soy-based expressions. On a seasonal rotation, the multi-course menus explore soy in all its guises: cold lobster noodles arrive bathed in a soy‑milk bouillon, thin sheets of tofu skin coddle a mackerel and cuttlefish mousse, and Lau's favourite – a signature Mora mapo tofu – takes the ingredient to fiery heights. The interior design is thoughtfully executed and undeniably calming; curving lines echo the silhouette and soft hues of her star ingredient, with tofu‑coloured walls balanced by green velvet banquettes.
