Simon Rogan’s Hong Kong outpost, Roganic, puts a huge focus on local and sustainable ingredients, and the restaurant’s commitment to traceability earned it a Green Star sustainability award. His UK restaurant L’Enclume also gained the same accolade, making him the only international chef to currently hold such status across two establishments. The farm-to-table cuisine sources ingredients from Hong Kong’s New Territories, and puts local twists on dishes that are British at heart. Tasting menus feature the stalwart crowd-pleaser of birch-sap-glazed truffle pudding with Berkswell cheese and mains of three-yellow chicken with fermented turnip, lovage and mustard greens. A wine pairing option is available but Roganic’s non-alcoholic offering using ingredients such as snap pea and cold brew hojicha is equally noteworthy.
