Simon Rogan's seasonal, farm-to-table philosophy, honed at his flagship restaurant in England's Lake District, found an unlikely home in Hong Kong's urban sprawl. The gamble paid off: the city outpost reimagined the chef's signature modern British style using ingredients sourced from Hong Kong's outer territories, earning acclaim for its sustainability credentials. Set in a light-filled space within the Lee Garden One skyscraper, the restaurant maximises its open-plan interior with a mesmerising terrazzo tiling, curvaceous sculptural accents and furniture built from wood salvaged from the city's typhoons. The seasonal five-course tasting menu, along with a shorter three-course lunch variation, showcases the kitchen's creativity with hyper-local ingredients. Highlights include grilled Napa cabbage with Hong Kong oyster mushrooms, dry-aged threadfin with tomato molasses and Guangdong duck roasted with longan fruit honey.
