Few bars take sustainability as far as Hong Kong's Socio. Rather than focusing solely on its own operations, the team works with surplus ingredients from nearby restaurants and bars – everything from avocado peels and seeds to oyster shells, coffee grounds and sourdough – turning them into ingredients that can be reused in its ecofriendly cocktail menu. The result is a collection of exciting, often surprising serves: a whisky sour-style drink made using upcycled cheese rinds, or a martini variation featuring vodka distilled with French fries. The bar itself is cute but compact – with queues often forming outside – and the atmosphere inside is warm and inclusive, in keeping with its social ethos.
