With its red Hanzi lettering dominating on the walls, detailed frescoes and lucky lily flower arrangements, Kinsman is unabashedly rooted in traditional Cantonese style. And yet, there’s a sleek modern edge too. Co-founder Gavin Yeung tells the story of myriad worldwide Chinatowns in liquid form, with pours like the paloma-inspired Miss Joaquim – osmanthus wine, gin, rose, elderflower, grapefruit soda – referencing Singapore, and a Chai-Wallah (bourbon with chai masala, cashew cream, milk and pepper) transporting the drinker to Kolkata. Each creation is immaculate, innovative and deeply rooted in local ingredients, so unique you’ve likely never seen them used in bars elsewhere. Don’t leave without sipping a house signature Papaya Van Winkle – named, of course, after the sought-after bourbon – featuring papaya wine, Chinese bitter aperitif, ginger, gin, tomato and snow fungus.
