Tokyolima

Hong Kong, China

As its name suggests, Tokyolima brings the flavours of Japan to the table by way of South America – specifically, the Nikkei cuisine of Peru. It’s not an especially original idea (not least thanks to the side hustle of a certain Robert De Niro) but when the purity of Japanese cuisine is fused with the vivid flavours of Latin America and served up in designer-led surrounds of low-key luxe, it’s a compelling proposition. Small plates (ceviches, salads, anticucho skewers) precede larger meat and seafood mains; vibrant spicing and punchy saucing are the strengths of the kitchen, though simpler dishes allow ingredients such as lobster and Iberico pork to shine, and whether deep frying or sushi slicing, this is a kitchen that gets the all-important basics right. A bar inlaid with beautiful marquetry means that cocktails are the obvious drinks choice here, though the flavours are even more in-your-face than the food.
