Milanese restaurant Trippa Milano and Hong Kong-based ZS Hospitality have joined forces to create Testina, a stylish homage to modern Northern Italian cuisine. The name is taken from its signature pig's head dish served with salsa verde, but executive chef Marco Xodo's love of offal doesn't stop there, with a classic Milanese tripe with cannellini beans and Parmigiano Reggiano, bone marrow roasted and spread on toast plus a pasta topped with a chicken offal ragu. The Italian wine list is worth exploring too, with a hand-picked flight of the team's favourite bottles available alongside a choice by the bottle or the glass. There's even a series of wine dinners that are well worth a look. And, in true Italian style, we're happy to report that there's homemade limoncello to round off your meal.
