Housed within the historic 19th-century Hotel del Parque, set inside the tropical Parque Histórico Guayaquil, Casa Julián is surrounded by flora and fauna just yards from the Daule River – a tranquil place to dine to the soundtrack of monkeys, birds and a river breeze. Executive chef Santiago Nieto creates dishes that celebrate the land, seasonality and sustainability, utilising ingredients found in Ecuador's mangroves, mountains and rich seas. The menu starts with pambamesa, a typical Ecuadorian dining style of shared dishes, including llama tartare with Andean potatoes and braised squid with tamarind and lemongrass. Mains include grilled octopus with black lentils and quinoa and beef tongue with mashed white carrot and green beans. Alternatively, opt for the eight-course tasting menu, with the option to add an Ecuadorean or international wine pairing. The cocktails are not to be missed either.
