Centred around the concept of tributes to nature and the astral cycles, Urko changes its menu for each of the four seasons: harvest, fertility, sowing and flowering. Depending on said season, the tasting menu might take ingredients from the Andes, the coast, the rainforest and the Galápagos, with dishes such as Andean grains, guinea pig belly, clams with cacao and smoked Amazonian cachama fish. Daniel Maldonado also offers four seats at the chef’s table, and there’s a casual dining area where guests can enjoy typical street food dishes.
