This top-floor restaurant and bar above Tallinn’s Fotografiska photo gallery (a satellite of the Stockholm original), with its picture-postcard views over the Old Town, might sound like somewhere for tourists but the kitchen is leading the way for sustainable cooking in Estonia. Sourdough bread is served on plates made from recycled baking trays, cabbage paste replaces butter and is presented on the repurposed bottom of a wine bottle while animal protein on the veg-forward menu is restricted to a meat and fish of the day. The ‘flower to root, nose to tail’ ethos involves organic, sustainably farmed ingredients and a zero-waste approach; anything that is left over is composted and given to the farmers who supply the restaurant.
