Castles don't come more picture‑perfect than the nineteenth‑century Château Pichon Baron, its turrets and spires reflected in the forecourt's rectangular pond. The still water belies the activity of the winery and cellars underneath, which were reconstructed following an architectural competition organised with Paris' Centre Pompidou in 1988. This Second Growth estate, founded during the Grand Siècle, produces some of the most intense, sophisticated Pauillac going, and you'll be treated to a vertical tasting of three such wines at the end of a bespoke estate tour, after viewing the vineyards (with vines up to 80 years old) and the modernised facilities.
