If you're in the market for a masterclass in French fine dining then look no further than Restaurant Paul Bocuse, founded by the eponymous legendary chef, who also leant his name to the world's most prestigious cooking competition, Bocuse d'Or. Since his passing in 2018, Bocuse's legacy lives on within this majestic dining room with its panelled walls, white tablecloths and some of the best classic French gastronomy found anywhere. Dishes on offer include the show-stopping Bresse chicken, with truffles stuffed under its skin served within an inflated pig's bladder (yes, really), which is punctured tableside before the bird can be carved and enjoyed. A more traditional offering is the black truffle soup, topped with a pastry lid, which Bocuse created in 1975 for the Élysée Palace, when he received the title of Knight of the Legion of Honour.
