Comice

Paris, France

Tucked into an unassuming corner of the 16th arrondissement and owned by a Canadian husband-and-wife duo, Comice was an unlikely hit among Paris’ hard-nosed food critics upon its 2018 opening. Since then the restaurant has raised the profile of its neighbourhood and is now a thriving dining destination.

Chef Noam Gedalof (formally of California’s The French Laundry) joins forces with sommelier (and wife) Etheliya Hananova amid homely interiors of antique furnishings and artfully arranged fresh flowers. His dishes utilise every molecule of texture and flavour in a minimal palate of ingredients to elevate classic French cuisine to new heights: a silky carrot velouté might be finished with toasted almonds and hazelnut oil, while perfectly domed macarons sing with a yuzu zing. The menu is a set four or five-course offering, with the option to pick seasonal additions for extra cost (but when that’s butter-poached French lobster, it’s worth it). Hananova’s wine list, meanwhile, favours small-scale, artisan producers.
