Now a full-blown hospitality kingdom, the Experimental Group counts among its brood bars, hotels and restaurants in 11 locations, with options as diverse as a Cotswolds country house and an Ibiza beach club. But it all started two decades ago here on Rue Saint-Sauveur in Paris, with a glam but relaxed drinking hole that mixed up the Parisian nightlife scene. Elegant and visual striking recent staples include the Rice Rice Baby, a blend of bourbon, mango cordial, coconut syrup, verjus, sake and rice mousse; or a Rose Paloma, with grapefruit and coriander cordial and clarified with soy milk. Sip them until the wee hours – up to 4am on Fridays and Saturdays – in a space adorned with exposed stone walls, vintage piano and ethereal pendant lights, the latter swirling like frozen balls of flames against the moody interior.
