There's nothing more serious than pleasure. This axiom governed André Terrail when he took over La Tour d'Argent (The Silver Tower) back in 1914. The philosophy is still evident today. Terrail's grandson André, who took over from his father Claude in 2006, is credited with bringing this 400-year-old establishment (it's said that King Henry III of France first encountered a fork here) well and truly into the 21st century. Now the gallic gastronomy has a contemporary edge and is served in the opulent surroundings of the revamped 6th floor main restaurant. The ceiling is silver and there's a multi-hued fresco at one end, but it's the view through the wall-to-wall window which draws the eye, overlooking le tout Paris. Drink it in, but don't forget to save space for one of the best wine lists in Paris. Chef Yannick Franques, previously at The Ritz, sends out a mix of classic dishes and new creations from the open kitchen, starring foie gras, langoustines, bisque, roast beef and the like. Leave room for the crêpes mademoiselle, a spin on crêpes suzettes, here seared in butter, caramelised sugar and champagne Cognac.
