But not to worry, there is nothing seedy about Calbar, a former wine bar that, in a welcome break for Paris, doesn't take itself too seriously. The staff wear shirts and bow ties, but tend to forgo trousers, settling for just boxer shorts. However, don't be fooled, the drinks are all business. Precision and approachability underline creative concoctions such as the Thailand – a duo of rums with lemongrass foam, pandan syrup and citrus; one of 13 country-inspired cocktails to feature on the latest menu. When in doubt, opt for the Surprise Me, a signature since opening in 2012, which is basically a bespoke cocktail tailored to your own likes and dislikes.
