There’s a Noma-style approach to service at Virtus. Co-owners Frédéric Lorimier and Camille Gouyer, who came from Vague d'Or - Cheval Blanc in Saint-Tropez, do all the cooking and the service themselves, ready to answer any questions about he menu's creative seasonal dishes. They’re partners outside of the kitchen, too, and their love and attention to detail infuses the menu. The Friday lunch menu is a steal at €80 ($84) – and a rare find indeed in Paris. Fish is a prominent feature, with a delicate sea bream ceviche with fermented yuzu sorbet alongside roasted sea bass fillet and braised fennel drizzled in a red wine bone jus and a creamy lemon and sage sabayon.
