There’s a Noma-style approach to service at Virtus. Co-owners and chefs Chiho Kanzaki and Marcelo Martin di Giacomo – both previously at Mirazur – do all the cooking and the service themselves, ready to answer any questions about their creative seasonal dishes. They’re partners outside of the kitchen, too, and their love and attention to detail infuses the menu, as does their Japanese and Argentinian heritages. The seven-course set menu is a steal at €75 ($80) – and a rare find indeed in Paris. Vegetables take centre stage in pared-down, yet refined, dishes such as the asparagus with burrata and Gariguette strawberries.
