Co‑owners Frédéric Lorimier and Camille Gouyer – formerly of La Vague d'Or at Cheval Blanc in Saint‑Tropez – handle both the cooking and the service themselves, happily guiding guests through the menu's inventive, seasonal dishes. Partners beyond the kitchen too, their shared passion and meticulous attention to detail is evident throughout. The Friday lunch menu is particularly good value, offering four courses for under €100 – a rarity in Paris. Fish features prominently, from delicate sea bream ceviche with fermented yuzu sorbet to roasted sea bass fillet with braised fennel, finished with a rich red wine bone jus and a creamy lemon and sage sabayon.
