Le Jules Verne
Paris, France
This poised, polished restaurant has an emblematic address: the second floor of the Eiffel Tower, accessed via a private elevator in the south pillar. Even at this level, you’re over four hundred feet up, so request a table by the window for matchless views across Paris. Frédéric Anton, of Le Pré Catalan, currently heads up the kitchen, and – like the all-star chefs who’ve gone before him – sets an exceedingly high bar. It’s exquisite, quintessentially French fine dining, with a modern lightness of touch; a langoustine ravioli draped in translucent beetroot jelly, or turbot with yuzu-infused beurre blanc and a glistening heap of caviar. Tasting menu prices reflect the elevated setting, but there is a simpler a la carte offering if you come for a weekday lunch (officially three courses, but actually more, if you factor in the snacks and mignardises).
