Opened in 2000, Astrance soon made its presence felt on Paris’ crowded dining scene. Tables were almost impossible to come by in its tiny dining room, while the 16-square-metre kitchen was helmed by chef Pascal Barbot, who won three Michelin stars then retained them for over a decade. After closing during the pandemic, it’s made a welcome comeback, with a new – more capacious – rue de Longchamp location. Barbot’s cooking still marries Japanese precision with French produce and savoir-faire, in dishes like white asparagus with buttermilk, rosemary and chilli, or pan-seared mackerel with a soy-laced, velvety beurre blanc. Barbot was formerly a sous chef at L’Arpège, and it shows: there’s an evident respect for each ingredient, and focus on what’s seasonal and fresh, rather than relying on luxury standbys like truffles and caviar. Unusually, there’s full a la carte alongside the tasting menus, which include a great-value lunchtime offering.
