Chef Matthias Marc has three restaurants in Paris, Liquide, Braise and this, Substance, which is without doubt the Michelin-Starred jewel in his crown. It's a little jewel box of a dining room with textured teal plaster walls, an angular polished stone bar, blue-toned velvet upholstery and a glass-fronted wine wall (showcasing just some of Substance's 180-cuvée-strong Champagne list) all incorporated into the design. The menus are no less thought out, with a special three-course menu available exclusively at lunchtimes, plus five, seven and nine-course tasting menus showcasing dishes inspired by Marc's home region of Jura. On your visit, dishes might include strawberries, lemon basil and sansho pepper, seed-crusted barbecued trout with candied celery, lovage, anise liqueur-spiked beurre blanc and fish roe or a dessert of chocolate, garlic, buckwheat and buttermilk.
