El Bulli alumnus Akrame Benallal has been creating cutting-edge dishes inspired by the molecular gastronomy movement at Akrame since 2011. The restaurant's decor has a touch of the avant-garde, with high-backed orange chairs popping against the plain walls, an unusual ceiling installation and an open kitchen that looks at once retro and futuristic. There are two tasting menus, plus a set lunch option, Menu Intuition and Menu Instinct, but you won't know what you're getting until you're in situ. Dishes might be olive and parmesan 'Oreo' cookies with sardine creme filling; tomato salad with clear tomato jelly and vodka-lemon granita; rack of veal with squid ink sauce and avocado; and espuma with banana crème, all a showcase for the inventiveness of Benallal's cooking. Expect a side of culinary theatre, too, to the point that eating here may change the way you look at food forever.
