Originality, creativity and pitch-perfect presentation are the bedrock of owner Marie-Anne Wild and chef Tim Raue’s ahead-of-the-curve cooking. Raue's eponymous Berlin restaurant – a regular on the World’s 50 Best list – rolls out an inspired menu based around his travels in Asia. The dining room, close to the historic Checkpoint Charlie, is bedecked in artefacts he has picked up along the way, all set against a cool blue palette. In the kitchen, Western and Asian techniques collide with ingredients rooted in Germany’s natural larder – Raue swerves gluten, dairy and refined sugar, too. Think hare Sichuan royale, pike-perch with kamebish soy and leek and the chef’s take on Peking duck.
