Rutz's Inspiration and Edgy Veggie tasting menus are defined by exacting dishes such as seared Norwegian scallop with fermented kohlrabi, caramelised sauerkraut purée and an elderflower mustard sauce infused with scallop beard. Non-alcoholic pairings are also adventurous, with juices, extracts, kombuchas and broths to match each dish.
