Bold is the restaurant that bills itself as ‘intimate but loud’ – though, then again, Papa’s knows that dining is as much about fun as it is about flavour. This theatrical Mumbai chef’s table from Hussain Shahzad, alumnus of 50 Best icon Eleven Madison Park in New York, has just 12 seats lining a U-shaped counter; very intimate indeed. The Bandra West space feels more like a retro home than a restaurant with knick-knacks lining the walls, avocado-hued tiles and 80s lighting. The constant buzz is a refreshing contrast to the hushed toned, pilgrimage-style fine-dining tradition you find so often elsewhere, while a parade of dishes artfully blends Indian flavours with global inspiration. Doughy shakarpara with corn and crème fraiche segues to samosa with pickled apple and spearmint, and tingmo steamed buns with blue cheese and pickled chilli. Mix things up further (literally) with the range of funky cocktails.
