Raised in Toledo, chef Manuel Olveira learned his trade working in the family restaurant. Now, many years later he’s gaining attention with his own establishment a continent away, in trendy Bandra West. Elaborate Spanish-inspired design – painted ceilings, ornate tiles, colourful archways and a centrepiece chandelier – joins classic Spanish bites ranging from paella to croquettes, cocas flatbreads to tacos (ok, not strictly Iberian, but still Hispanic). Dishes such as 12-hour-cooked ribs with sweetcorn or gambas al ajillo are propped up with bar concoctions like an aeropressed, aged boulevardier, or a gin and tonic infused with whole star anise, peppercorn, cinnamon, cloves and citrus peel. Tequila fans can raid the dedicated margarita menu, whether seated at the polished wooden bar or in one of the dimly lit nooks that echo a Spanish mansion.
