Nusantara by Locavore

A spin-off from Asia’s 50 Best regular Locavore – the neighbouring restaurant from chefs Ray Adriansyah and Eelke Plasmeijer –, Nusantara is named after the Javanese word for ‘archipelago’ and acts as a showcase for all that Indonesia’s 17,000 islands offer on the food front. It’s a tall order and one that the Nusantara team pulls off with skill and charm in an interior of light woods and rattan partitions that is every bit as stylish as Locavore. A brigade of Indonesian-born chefs cooks lesser-known regional dishes based on traditional flavour combinations. Each is marked on the menu with its origin – a small plate of smoked pork belly with fermented sambal from Kupang, say, or a larger dish of mud crab marinated with ginger, sweet soy and grated coconut from Samarinda. To drink, there is a brace of wines but half a dozen iced teas and cocktails incorporating pandan leaves and lemongrass have more locavore appeal.
