A cool, contemporary room with enormous windows. Davide Oldani – who has worked under Albert Roux, Pierre Hermé and Alain Ducasse – uses innovative cooking and management techniques to produce simple, surprising food that doesn’t cost the earth. His style of cooking, which he calls “pop cuisine”, involves rigorous seasonality, creative presentation and contrasting flavours and textures. A section of silky radicchio is served with red wine and cinnamon reduction, creamed gnocchi flavoured with ginger is scattered with juicy mussels and a crunchy chocolate, pear and rum dessert looks like a collection of brightly coloured puffball mushrooms. Magic.
