Viviana Varese – who trained under influential Italian chef Gualtiero Marchesi – has a particular flair for vegetables and seafood, approaching both with creative delicacy and plenty of modern technique. Risotto is served in a nest of fried nettles and amaranth chips, while the catch of the day arrives in the form of ceviche with unexpected but delicious raspberry sauce.
