Let's start with the location: St Mark's Square. It doesn't get much more central in Venice, and, set in a palazzo with 17th-century interiors and views over the city's most famous buildings, Quadri is an Italian classic. The Alajmos – who run Michelin three-star Le Calandre in Padua, as well as other noteworthy restaurants – have been at the helm since 2011. Here, inspiration is taken from traditional Venetian and Italian dishes, with a many ingredients as possible sourced from the lagoon. Guests can choose from two tasting menus or a la carte. Expect rich cuttlefish ink risotto, as well as beef carpaccio sprinkled with pearls of caviar (Venice has been at the heart of the caviar trade since the 13th century – indeed, there's an entire tasting menu at Quadri devoted to it). The wine list includes bottles from eastern Europe and the UK, and every corner of Italy.
