Take a pew at the 18-seat counter and get set for Edomae sushi at its freshest and best from Sato's dedicated 25-piece nigiri set menu (you can choose the 20-piece option at lunchtimes). You might kick off with maguro tuna taken from the flavoursome base of the head, before moving onto raw anago (salt water eel) and budou ebi (shrimp with caviar) and the sublime iwashi (sardine). Connoisseurs will note that Sato's rice is on the heavily seasoned side, which makes for a beautiful pairing with sake and fattier cuts of fish.
