Morikawa

Tokyo, Japan

If you want to eat here, you must do your homework. Like many invite-only restaurants, there's no website. Ask locals. Bribe a concierge. Beg, borrow, steal. It will all be worth it. Morikawa has a near mythical status; its classical kaiseki menu steeped in mystery. The lucky few who to make it into chef Kenji Mori's inner sanctum tip Hokkaido hairy crab with vinegar sauce, spiny lobster sashimi with wasabi and pine mushroom and pike conger hot pot as triumphs. There's no guarantee these will be served on the day as dishes come and go with the seasons. But there's no guarantee you'll get a seat either. Cross all your fingers and toes.
