At the helm is perfectionist Hideki Li, a former executive chef of NYC’s UN ambassador residence and restaurateur extraordinaire. The techniques Li and his tight brigade employ may be precise, but the atmosphere is relaxed, a fact only helped by the accessible wine and sake lists. Painstaking attention to detail and the high quality of the raw produce shines through in dishes such as quail’s egg yolk and trout caviar, served within a spherical rice cracker atop a tangled rainbow of sautéed vegetables; ebi-soba, noodle slivers tossed with prawns; and a sensational, seaweed-seasoned abalone risotto.
