Bringing together architects and artisans, Auyl brings an experimental restaurant experience. Among the mountainous Medeu region of Almaty, Kazakhstan, stands a former yurt inherited from Soviet modernism since re-homed and transformed into a dining room anchored by an open kitchen. The restaurant offers 'neo-nomad cuisine' inspired by the traditions of Central Asia, with water, flour and meat forming the foundations of many dishes. Food is cooked over an open fire, in a qazan (cauldron), on a mangal grill and in a tandoor oven. The wine list is equally compelling, featuring a mix of local and international bottles with a focus on lesser-known and sustainably produced labels. Take a moment to appreciate the interiors, too: atmospheric lighting, handmade chairs, carpets and artisanal decor create a feast for the senses
