This cosy spot in Guadalajara is unsurprisingly dedicated to agave, with a menu that changes every single month. The team plays with flavour and presentation, with recent drinks including the ‘Don Chinar’ (a blend of Don Fulano Fuerte Tequila, Cynar, triple sec, lime, angostura bitters and fermented pineapple peel) and the mezcal-based ‘La Hurricana’, served in a repurposed candle jar. Befitting a good-time bar, there's a monthly live music programme.
