Xokol

This architect-designed space completely repurposes a former mechanic’s workshop in the Santa Fe neighbourhood of Guadalajara, with an ash-coloured restaurant that could not be darker or moodier if it tried. Xokol is all about communal dining, blurring the boundaries between patrons and staff with a large table for friends and strangers to sit and mingle. The menu's focus is clear thanks to the hundreds of corn cobs suspended from the ceiling like modern artwork. Chefs and spouses Óscar Segundo and Xrysw Ruelas Díaz work their matrimonial magic on a weekly-changing tasting menu that brings together ancestral ingredients and modern dishes – many of which are reinterpretations of the humble tortilla. Previous highlights also include the insect molé and a nigiri-inspired tamale.
