Named after the Roman patron of the arts, Gaius Cilnius Maecenas, this stuccoed bar with backlit display shelves pays homage to the wonder of craft – just look at its transformation from a former parking garage. Yet the star attraction here is the elaborate cocktail programme, which relies on spirits and reductions brewed in-house. Liqueurs are made in keeping with the region's tradition of cane alcohol distillation: 96 per cent neutral cane spirit serves as the base for aromatic botanicals and fruits, creating expressions such as limoncello and lavender cream liqueur. Its range of fortified wines is made together with nearby Discográfica Winery. Cocktails show off the craft involved, favouring simple serves with bold flavours. Highlights include the Jardín de Giverny, a floral, effervescent blend of lavender liqueur, bay leaf spirit and sparkling water, and the Monje, made with pineapple eau-de-vie, lemongrass and green chartreuse.
