A fusion feast awaits at Bakéa, which triples up as a gourmet store and café. Chef-patron Vicente Etchegaray established the popular spot in 1997 and has since scored multiple accolades for his cooking. Locality and seasonality are paramount, with Etchegaray sourcing many ingredients from the restaurant's sustainable farm in Valle de Bravo. He uses this sun-ripened produce to recreate Basque flavours and textures, using techniques he learnt from his years spent in established kitchens in Paris. Highlights include the poached eggs with foie gras, avocado and truffle vinegar; perfectly al dente linguini with shrimp and scallops; portobello sashimi; and sweetbread ravioli with roast chicken juice and sherry. The simple decor, with its crisp white tablecloths and electric blue chairs, allows the vibrant dishes to jump off the plate.
