Edgar Nuñez’s romance with plants began in childhood and he applies culinary techniques honed at Europe’s El Bulli and Noma at Sur 777. A regular in the upper echelons of Latin America’s 50 Best, the restaurant lets simple, locally sourced ingredients shine, with the likes of sweet potato lollipops, Mexican style rice and a ‘perfect’ egg, and soft-shell crab with surf and turf mayonnaise making up the 16-step tasting menu. What’s on offer changes according to the season, with much of what makes up each dish coming from the restaurant's garden. Mexican vintages give the wine list additional local backbone.
