Given its location in the heartland of mezcal, it’s only right that this quintessential Mexican spirit is at the core of this Oaxacan cocktail bar’s offering. Selva doesn’t stop there, however, championing local ingredients and Mexican flavours, not to mention its wide range of distillates. Seasonal ingredients have been used to create gourmet cocktails here since the bar opened its doors in March 2019, combining environment and flavour in drinks such as the Alfareria, made with avocado leaf-infused gin, local plant chayote, Mexican leaf bitters and more. Accompanying dishes follow a similar philosophy, such as the Mangorita Ceviche with mango tiger’s milk and chile morita and more. The bar itself is rustic and refined in equal parts – the perfect setting for these distinctly local flavours.
