Al Fassia Gueliz is one of the few restaurants in Marrakech that consistently draws a local crowd, which should tell guests everything they need to know about the quality of its traditional, centuries-old Moroccan recipes. Run entirely by women, both in the kitchen and front of house, the cuisine they produce sounds simple enough on paper but delivers layers of flavour and texture, with ingredients sourced from small local producers. Served in an elegant dining room of cushion-strewn banquettes and crisp white tables, the pigeon pastilla is the standout dish, celebrated for its light pastry and moist meat, but tagines here are also superb. Nibbly bits include delicate filo pastry parcels (briouates) filled with rice, meat, vegetables and cheese, and fresh from the garden salads.
