In the heart of Gueliz, Marrakech's cosmopolitan 'New City' district, Farmers is a lesson in thoughtful, season-led cuisine. The kitchen works closely with a permaculture farm on the outskirts of the city, sourcing pesticide-free produce that lasers in on freshness and natural flavour. A squash and arugula appetiser may sound like an unlikely pairing, but the kitchen makes it sing – blending the arugula in a herbaceous green sauce and topping the squash with labneh, walnuts and pecorino. Beyond the food, the restaurant channels the neighbourhood's chic sensibility, with marble tables, abundant foliage and a calm open kitchen that sets an easy, relaxed tone.
