A world away from Marrakech’s ancient souks in modern Guéliz, Barometre – which bills itself as Morocco’s first mixology bar – provides a very different, and yet still thoroughly North African experience. Hammered copper, decorative lattice accents on walls and a bar lined in bottles and jars of fragrant spices and peel evoke typical scenes from local markets, riads and hammams. The team tinkers with making their own homemade infusions, bitters and macerations to bring a unique local character to classic cocktails, and also runs regular mixology classes for drinks-making newbies at 5pm before the bar opens at 7pm. An adjoining restaurant provides all the stomach lining you may need ahead of a night out, serving fusion dishes such as chimichurri beef toast or avocado petals with prawns and quinoa.
