1688 Resto

Asuncion, Paraguay

If you’re seeking quality pasta in Paraguay, you're in luck. This restaurant, founded by Dani and Belén Fernández in 2015, does a fine line in Italian fare, which the siblings learnt to love growing up around their nonna. Antipasti include mortadella, stracciatella cheese, beef carpaccio, prosciutto and croquettes, but the star of the show is the homemade pasta, much of which is rolled by hand in front of you and served with fresh sauces and stuffings. Expect pumpkin cavatelli with a trio of cheeses; ossobuco ravioli; ricotta and spinach bottoni; potato gnocchi with ragu; or lasagna. The meat dishes are also substantial, many incorporating local flavours such as braised lamb with Ayoreo chilli and guava paste. On warmer days, ask for a table on the plant-decked patio.
